Super Salad!

Kids will love this twist on the classic nicoise salad any day of the week! Keep it fussy eater friendly by leaving out the anchovies and olives and choosing your favourite dressing to compliment. A mix of cooked and cubed butternut squash and garden peas will go down a treat with this dish!

Ingredients:

  • Roast chicken
  • Lettuce
  • Cocktail tomatoes
  • Green beans
  • Sugarsnap peas
  • Sweet peppers
  • 2 hard-boiled eggs
  • Salt and pepper

Steps:

  1. Cube the roast chicken and add to a large bowl, continue to add ingredients as you prepare them
  2. Chop iceberg lettuce, orange and yellow sweet peppers, cocktail tomatoes and green beans into small chunks
  3. Cut sugar snap peas in half
  4. Chop 2 warm hard boiled eggs into quarters
  5. Combine ingredients well and season with salt and pepper to taste
  6. If desired, add a dressing or drizzle of olive oil
